Hua Hin does not have much in the way of vegetarian/vegan food, since it is not on the backpacker trail and it does not have much of a Thai Chinese community that the Northern provinces tend to have. However, there are a few Thai style jay stores to choose from.
This one, which has no name other than vegetarian food, is a good bet. It is larger than the others and has a decent selection of around seven or eight pre-cooked dishes to choose from as well as some mock meat snacks. Everything is buffet - no menu. They also have a huge abundance of fruit. You can either buy the whole fruit or buy it prepared and cut up for you.
Prices are local so very cheap, little English is spoken but you can just point to what you want if you cannot speak Thai. Although they are labelled as vegetarian, remember that Thais do not really use or understand the word vegan in the same way that they do vegetarian. I did not see anything here that wasn't vegan, but it might be worth checking that there are no eggs in any of the dishes, just tell them 'mai kin kai'.
Useful that they are open every day and until quite late, but as with all these stores make sure you go early enough to get the best choices.
You will find this place at the top of the road with the night market, on the corner where it meets with Prappaklao.
