You can make this delicious and simple vegan cake one of two ways. You could simply make it in a loaf tin and then cut the slices up as brownies, or you could make it in a cake tin. If making a cake, I would suggest doubling the frosting and cutting through the cake and putting one layer in the sandwiched middle as well as covering the entire top and sides of cake. If making brownies, take the loaf out and cover with frosting or slice it up and frost over each slice.
Here is how to make the cake.
Cake Base
Dry ingredients
1 cup of plain or whole-wheat flour (this gives a slightly grainy texture - feel free to substitute for your preferred choice of flour)
1 cup of organic sugar
½ cup of cocoa powder
1 teaspoon of baking soda
¼ cup of ground flax meal
Wet ingredients
1 cup of your preferred plant based milk
1 teaspoon of apple cider vinegar
1 teaspoon of vanilla extract
2 mashed bananas
Chocolate Frosting
1 cup of vegan margerine/butter*
½ cup of chocolate chips*
¼ cup of maple syrup or agave nectar or your preferred honey alternative - you could also just use sugar
Dash of plant based milk
Method
Place all dry ingredients in to a mixing bowl and mix thoroughly. It will look like this:
Place all of the wet ingredients in to a mixing bowl and whisky vigorously until all ingredients are fully combined. It will look like this:
Mix the wet ingredients in to the dry ingredients and mix together. Pour the batter in to a pre-greased or parchment paper proofed cake/loaf tin. It will look like this:
Bake in the oven for about 30-40 minutes. I decided to make brownies rather than a cake, but you could make either. The finished brownie will look like this:
